Feta Cheese Salad

Yield: 4 servings

Ingredients

  • 1 head Boston lettuce
  • 2 mini cucumbers, cut in half lengthwise, and then cut into bite-sized diamonds
  • 2 scallions, finely sliced
  • 5 Roma tomatoes, ripe, seeded, and then cut into strips  
  • 16 black olives, pitted & cut into halves
  • ½ cup feta cheese cut into bite-sized pieces

Dressing

  • 50 ml extra virgin olive oil
  • 10 ml fresh lime juice
  • 10 ml chopped fresh cilantro
  • Salt, and freshly ground black pepper, to taste

Method

  1. Wash and drain the salad leaves. Shred the leaves and arrange them in the bottom of a large salad bowl. Add the cucumber, scallions, tomatoes, and olives.
  2. Cut the cheese into medium cubes, then transfer to the salad bowl, and mix gently.
  3. Combine the dressing ingredients in a mixing bowl, mix well until thoroughly combined, and season with salt and freshly ground black pepper.
  4. Drizzle the dressing over the salad and serve immediately.

Classic Juicy Cheeseburgers

Yields 4 burgers 

Ingredients:

  • 1 ½ pounds lean ground beef
  • ½ onion, finely chopped
  • Cheese slices of choice ( Cheddar or American)
  • 1 egg
  • 1 tbsp garlic powder
  • 1 tsp soy sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp dried oregano
  • salt and pepper to taste

Method:

  1. Preheat your grill to medium-high heat.
  2. Combine ground beef, onion, egg, garlic powder, soy sauce, Worcestershire sauce, oregano, salt, and pepper in a large bowl. Use your hands to form the mixture into 4 patties.
  3. Place the patties on the preheated grill and cook for approximately 4-5 minutes per side for medium doneness.  Flip using our Cuisipro stainless steel turner Thermometer read in the center should be at least 165 degrees F (74 degrees C).
  4. During the last minute of cooking, place a slice of cheese on each patty to melt.
  5. Toast the hamburger buns on the grill for a minute or two until lightly golden.
  6. Assemble the burgers with your desired toppings and serve hot.

 

Succulent BBQ Chicken Drumsticks

Serves 4 

Ingredients:

  • 8 chicken drumsticks
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tsp seasoning salt
  • 1 tsp all-purpose seasoning
  • ½ cup BBQ sauce (your favorite brand or homemade)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method:

  1. In a bowl, mix the olive oil, all spices, salt, and pepper. Let marinade in the fridge for 1 hour or if you have time overnight. 
  2. When ready to cook preheat your grill to medium-high heat.
  3. Place the drumsticks on the preheated grill and cook for about 25-30 minutes, turning occasionally to ensure even cooking and prevent burning.
  4.  About 20 mins into cooking, using your Cuisipro Basting Brush, brush the chicken drumsticks generously with the BBQ sauce mixture, coating all sides.
  5. Turn with your Cuisipro Grill/Fry Tongs and allow the sauce to evenly cook on all sides.
  6.  Using your Cuisipro Basting Brush, brush the drumsticks with additional BBQ sauce during the last few minutes of cooking for extra flavor.
  7. Once the chicken reaches an internal temperature of 165°F (74°C), remove it from the grill and let them rest for a few minutes before serving.
