Ingredients: For the Cookie Dough:

  • 1 cup of softened unsalted butter
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 2 large eggs at room temperature
  • 2 ½ cups of all-purpose flour
  • ¾ teaspoon of baking powder
  • ½ teaspoon of salt

For the Sugar Cookie Frosting:

  • 4 cups of sifted powdered sugar
  • 6-8 tablespoons of milk at room temperature
  • 2 ½ tablespoons of light corn syrup
  • Gel food coloring (optional)

Method: For the Sugar Cookies:

  1. Let's start by making our delicious sugar cookies! Cream together the butter and sugar in the bowl of a standing mixer. Add the vanilla extract and eggs and beat until everything is combined.
  2. Add the flour, baking powder, and salt, and beat everything together until you have a smooth dough.
  3. Divide the dough into two equal portions, and shape each piece into a round, flat disc. Wrap each piece tightly with plastic wrap and let them chill in the refrigerator for at least 2 hours.
  4. Preheat your oven to 350°F/180°C and line two large baking sheets with parchment paper.
  5. Remove one of the sugar cookie dough discs from the refrigerator and let it sit at room temperature for 5 minutes to soften up a bit.
  6. Place the sugar cookie dough on a floured surface and roll it out to a thickness of ¼". Use your favorite cookie cutters to cut out fun shapes and place them 1 inch apart on the prepared cookie sheets.
  7. Keep repeating until you've used up all the dough. Don't worry about any scraps - you can gather them up and re-roll the dough up to two more times (that's three times in total!).
  8. Pop the cookies in the preheated oven and bake for 9-10 minutes, or until the cookies are puffed up and just set around the edges. Once they're done, let them sit on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Repeat this whole process with the second disc of dough.
