Whether you’re at home baking with the kids or attending a Halloween party with friends, these Pumpkin Spice Mummy Cookies are sure to impress and delight.

Ingredients:

  • 2 ½ cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ¾ cup unsalted butter, softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • ½ cup canned pumpkin (not pumpkin pie filling)

For Decoration:

  • 1 cups powdered sugar
  • 1 tsp vanilla extract
  • 3 to 4 tablespoons milk
  • 60 candy eyeballs

  1. Start by melting the butter in a small saucepan over medium heat until it takes on a golden-brown hue. Then remove from heat.
  2. In a separate bowl, whisk together all the dry ingredients, including flour, cornstarch, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the browned melted butter and sugars until it resembles the texture of wet sand. Then stir in the egg, vanilla, and pumpkin.
  4. Gradually incorporate the dry ingredients into the wet mixture until the dough reaches a sticky consistency.
  5. Cover the bowl and allow the dough to chill in the refrigerator for at least 2 hours or up to 2 days.
  6. When you’re ready to bake, preheat your oven to 350°F.
  7. Form the dough into balls of roughly 1.5 inches in size and arrange them on baking sheets lined with parchment paper, ensuring a 2-inch gap between each.
  8. Bake for about 8 to 10 minutes, or until the cookies’ tops appear set.
